Made with high-protein cottage cheese, this tasty breakfast is filling and satisfying. It’s lightly sweet and works with a variety of toppings.
⅓ cup cottage cheese
⅓ cup milk
½ cup rolled oats
2 ½ tablespoons maple syrup
¼ teaspoon vanilla extract
½ teaspoon cinnamon
pinch of salt
toppings of choice (see note)
Stir everything together except toppings in an 8-oz. Mason jar or storage container and refrigerate 4 hours or overnight. Add toppings just before enjoying.
Note: Crunchy granola, fresh fruit, chia or hemp seeds, sliced almonds, and peanut butter are all great toppings for this on-the-go breakfast.
